Artisanal distillation in a copper still of Chardonnay and Macabeo grape pomace after they have fermented together with the must. Subsequently,
the spirit obtained is macerated with 14 natural and ecological botanicals, among which rosemary, thyme, lavender and lemon verbena stand out, all of them aromatic herbs native to our Mediterranean mountains.
Tasting notes
Clean, transparent, yellow-brown colour with green reflections. It gives off subtle notes of Mediterranean scrub: rosemary, thyme, lavender,
anise, lemon verbena. Elegant balsamic, spicy and minty aromas. On the palate it is soft, sweet, with a persistent flavour and long on the palate.
Recommendations
Take it in a glass or cup with a wide base and a slightly narrower mouth between 0ºC and 3ºC. It needs no accompaniment and is a fantastic digestif
after a long meal. It will also be an ideal ingredient for original cocktails where you want to accentuate the balsamic notes and give it a Mediterranean touch. Try a “Compate Mojito” with Comparte, lime juice, brown sugar and soda.
