PAGO DE THARSYS | CERÁMICA BRU NATURE GRAN RESERVA 2019

The Vineyard

Limestone soils predominate, with some layers of clay at depth and a porous limestone rock called tufa about 2 meters below the surface. This type of soil limits nutrients but retains moisture during dry periods, resulting in small grapes that are highly aromatic and with high acidity—ideal for producing elegant, high-quality wines.

Vintage 2019

The 2019 vintage began with good water reserves thanks to winter rainfall. Bud break was delayed until the end of May due to low spring temperatures. The summer was very hot, and some storms with hail reduced production by 10%. Harvest arrived with intense rainfall, but the careful work in the vineyard allowed healthy—though limited—grapes to be collected. Chardonnay was harvested on September 10, resulting in a long-lived vintage with great aging potential.


Winemaking

Produced following the traditional method, with manual harvesting and grape selection. It undergoes a minimum aging of 60 months in an underground cellar and is made as a Brut Nature “0 dosage” to express the character of the estate’s organic Chardonnay. Riddling, disgorging, labeling, and boxing are all carried out manually.


Tasting Notes

Appearance: Bright golden yellow color, with a fine and persistent stream of bubbles forming a delicate crown.

Nose: Delicate aromas of white flowers, stone fruit, and citrus, with notes of fresh vegetation, wet stone, butter, yeast, and toasted almonds.

Palate: Fresh and dry on entry, with fantastic acidity and flavors of stone fruit, pear, and apple. The fine bubbles add volume and creaminess, leading to a long finish with citrus and buttery notes.


Serving & Pairing

Serving: Serve between 7–9 ºC in a medium-sized glass, slightly closed at the top.

Pairing: Pour carefully to preserve the bubbles. Ideal to accompany white fish, seafood, poultry, seafood stews, and roasted vegetables.
