The Vineyard
The Umbría-Carrascal plot, located at 1,000 meters above sea level and surrounded by forest, covers 3 hectares of low-yielding Xarel·lo vines planted on clay-limestone soils. The vineyard faces northeast and has a gentle slope that favors drainage and natural ventilation.

Vintage 2019
The vintage began with good water reserves, followed by a late bud break due to the cold spring and a very hot summer with some storms. This small Xarel·lo plot produced a very limited yield but of excellent quality, harvested on September 15 with exceptionally healthy grapes.
Winemaking
Produced following the traditional method, with manual harvesting and careful grape selection. It undergoes a minimum aging of 60 months in an underground cellar and is made as a Brut Nature “0 dosage” to fully express the character of the Xarel·lo grape and the vineyard. Riddling, disgorging, labeling, and boxing are all done manually.
Tasting Notes
Appearance: Bright golden yellow with fine, persistent bubbles forming a delicate crown.
Nose: White flowers, fresh stone fruit, lemon peel, grapefruit, tea leaf, moss, butter, and young almonds.
Palate: Fresh and dry entry. Vibrant acidity perfectly balanced with fruit and volume. Creamy, elegant, with a long almond-flavoured finish.
Serving & Pairing
Serving: Serve between 7–9 °C in a medium-sized glass with a wide bowl.
Pairing: Ideal with sashimi, oysters, and caviar, and perfect to enjoy with good music and views of the sea or the mountains.
