The Vineyard

A 1.12 ha Bobal plot with old vines and low yields, planted on clay soils that retain moisture and contribute freshness.

Vintage 2023

A mild, dry winter, followed by a warm spring with late rainfall, and a very hot summer that reduced yields but produced grapes of excellent quality.


Winemaking

24-hour cold maceration followed by gentle fermentation to preserve aromas, with light pump-overs. Aged for 12 months in second- and third-use French oak barrels.


Tasting Notes

Appearance: Intense aromas of fresh red fruit and lavender, with notes of vanilla, toasted coffee, and spices.

Nose: Aromas of flowers, pink grapefruit, and red berries, with hints of butter, cream, and minerality.

Palate: Intense red fruit flavours with good acidity and ripe tannins. Silky, well-balanced, with a long finish of toasted spices.


Serving & Food Pairing

Serving: Serve between 16ºC and 18ºC in a medium-sized glass.

Food Pairing: Ideal with red meats, cured meats, game, legume stews, and roasted vegetables.
