Organic high-altitude Chardonnay vineyard
The vineyard is located in Requena (Valencia), at more than 700 meters above sea level and 70 km from the Mediterranean Sea. The continental climate with maritime influence, strong thermal contrast, and calcareous soils allow for slow, balanced ripening. It is cultivated under certified organic practices: no herbicides or pesticides, and techniques that respect biodiversity and soil life.
Traditional winemaking and barrel ageing
Harvesting is done manually in 20 kg boxes, with immediate entry to the winery and selection on a sorting table. The must ferments in French oak barrels (50% new, 50% one year old), where it remains for 2 months on its lees with daily bâtonnage. It is then transferred to stainless steel, where it stays for another 6 months on lees before bottling.
