Pago de Tharsys Millésime Barrica Brut Nature Reserva 2022 is crafted using the traditional method, beginning with hand harvesting and a meticulous selection of grapes. The must ferments in French oak barrels, where it ages for 2 months with daily bâtonnage. Afterwards, the cava rests in an underground cellar for 24 months, with no dosage added, preserving the purity and aromatic complexity of the Chardonnay. With its exceptional freshness and complexity, this cava delivers a truly unique experience.
TASTING NOTES
Appearance: Old gold color with golden highlights. Extra fine, delicate, and persistent bubbles.
Nose: Ripe stone fruits (peach, apricot, plum) and citrus (grapefruit and lemon). Subtle aromas of vanilla, custard, biscuits, and toasted butter.
Palate: Dry, with a round and creamy texture. Delicate, enveloping bubbles with great structure and volume. Long finish with notes of toasted nuts (hazelnuts, almonds) and bread crust.
Serving and Pairing
Serve between 7ºC and 9ºC in a wide-bodied glass with a slightly closed rim. Ideal with fish, smoked meats, barbecue, and hard cheeses. Its complexity will increase over the next five years, so cellaring is recommended.
Organic Viticulture
We cultivate our vineyards in accordance with the principles of organic viticulture, without chemical herbicides or pesticides. We use organic fertilizers and natural resources that preserve the environmental balance and promote biodiversity in the vineyard.
Vintage
The winter of 2022 was cold and dry, which helped cleanse the vineyard soil of harmful insects. Spring was rainy and cold, helping to replenish underground water reserves, although the low temperatures delayed bud break until the end of April. Once temperatures warmed, bud break was very vigorous, requiring intensive green pruning. The summer was extremely hot and dry, with several heatwaves that slowed grape ripening. The drought resulted in a low-yield harvest, but the grape quality was exceptional, offering great aromatic intensity.
