The Vineyard

Predominantly calcareous soil with deep clay layers that retain moisture, resting on limestone bedrock.

Vintage 2023

A mild and dry winter, a warm spring with late rainfall, and a very hot summer that reduced yields but resulted in grapes of excellent quality.


Winemaking

Produced following the traditional method, with a second fermentation in bottle and manual harvesting. A mosto flor (free-run juice) is obtained through gentle pressing, followed by a minimum ageing of 24 months on lees. The dosage is 8 g/l, using expedition liqueur from the family solera.


Tasting Notes

Appearance: Yellow colour with bright golden highlights and very fine, persistent bubbles.

Nose: Aromas of fresh stone fruit, apple, and citrus, with delicate notes of cream and bread crumb.

Palate: Vibrant, creamy, and full-bodied, with fine and persistent bubbles. Flavours of fresh stone fruit stand out, leading to a long finish with hints of almond and walnut.


Serving & Pairing

Serving: Serve between 5–7 ºC in a medium-sized tulip-shaped glass.

Food Pairing: Ideal with baked or grilled fish, seafood rice dishes, white meats, and grilled or tempura vegetables.
