Organic vineyard and calcareous soils
The grapes come from the “Albar” plot within Pago de Tharsys, with predominantly calcareous soils formed by porous “toba” bedrock that retains moisture and promotes vineyard balance. At 780 m altitude, the continental-Mediterranean climate ensures slow ripening, ideal for preserving freshness and aromas. The vineyard is cultivated under organic principles: no pesticides, herbicides, or synthetic fertilizers.
Traditional winemaking with more than 24 months on the lees
Harvesting is manual, in 10 kg boxes, with table selection and gentle pressing. The skins are macerated for a few hours to achieve the characteristic rosé hue. After the second fermentation in bottle, the cava rests for at least 24 months in a horizontal position. The dosage is 6 g/l, with expedition liqueur made from the family solera of more than 26 years. The entire process takes place on the estate.
Tasting notes of Millésime 2022 rosé cava
Appearance: Rose-gold color with coppery rim. Fine and persistent bubbles.
Nose: Blossom, pink grapefruit peel, cherry, raspberry, fresh butter, toasted bread, talc, and wet stone.
Palate: Creamy, enveloping, and very fresh. Cherry and wild strawberry, fresh cream, and toffee. Clean, long, and persistent finish.
Ideal pairings for this organic rosé cava
Perfect with seafood such as sea urchins, lobster, prawns, or spider crab. Also ideal with rice dishes and seafood stews. Serve between 7–9 ºC in a medium-bodied glass. Enjoy it at sunrise, and toast again at sunset.
