The yeast used has been selected for years by the family who makes it so as to produced a unique and special cava. The riddling is by hand and the cava does not have added sugar.
TASTING NOTES
Appearance: A bright, golden, yellow colour, with extra-fine, uniform bubbles
that are slowly released to make a fine, delicate, lasting head.
Nose: Hints of ripe yellow fruit: peaches, golden delicious apples, lemon
peel. Hints of butter, roasted hazelnuts, baked apple, freshly
baked bread, custard cream, vanilla.
Mouth: Round, flat and creamy. Delicate, smooth bubbles resulting from
the long ageing process in racks producing an extraordinary volume
and creaminess in the mouth. A lasting, fresh sensation on
the palate.
Serving: Serve between 7ºC and 9ºC in medium-sized glasses, wide body,
slightly narrower at the top. Pour slowly down the side of the
glass to avoid breaking the bubbles. An ideal cuvée for great moments
and celebrations. Excellent to combine with buffet meals
with a huge diversity of ingredients and preparation.
It will improve in the bottle and become more complex over the
next 5 years.
