Organic Bronx Vineyard on Siliceous Soils
The Bronx variety is grown in a special plot with limestone soils formed by fossil sediments and marine micro-organisms. It is a seedless, highly aromatic, and delicate grape that requires high trellising to protect its fragile shoots and provide good ventilation for the clusters. The vineyard is farmed following strict organic principles, without chemical products, fully respecting the biodiversity of the environment.
Natural Winemaking with Raisining and Arrested Fermentation
The grapes are hand-harvested and sun-dried on mats to achieve slight raisining that naturally concentrates the sugars. Fermentation is arrested by cold to preserve part of the residual sugar, without adding alcohol or external sugars. This wine does not undergo barrel ageing to preserve the pure varietal expression and highlight its fruity and floral aromas.
Tasting Notes – Dulce Natural Organic Sweet Wine
Appearance: Bright old gold with orange reflections. Slow, dense tears.
Nose: Exuberant aromas of exotic fruits (passion fruit, mango, custard apple), yellow flowers (marigold), and a delicate touch of pollen.
Palate: Creamy, intense, and enveloping. Excellent balance between sweetness and acidity. Persistent and highly aromatic finish.
Perfect Pairing for this Natural Sweet Wine
Perfect with creamy cheeses, foie gras, poultry terrines, desserts with yellow fruits, custard cream, puff pastries, and traditional sweets such as torrijas, pestiños, or buñuelos. Serve between 6 and 8 ºC in medium-bodied glasses.
