Pago de Tharsys Night Harvest Grenache 2023 – Grenache Rosé Wine
Pago de Tharsys Night Harvest Grenache 2023 is crafted using traditional methods, with careful oversight throughout the entire process, from harvest to bottling, ensuring a wine ready to be enjoyed. To achieve its delicate rosé color and refined flavor, we macerate the grapes in a cold press for a few hours to extract the must. Partial fermentation takes place at a low temperature in stainless steel vats before completing fermentation in first- and second-use French oak barrels. The wine is then aged on its lees in barrels with periodic bâtonnage for two months, followed by an additional month of lees aging in stainless steel vats before bottling.
Tasting notes:
- Appearance: Clear, glowing pale pink colour. Fine, slowly flowing drops with a very attractive oily sensation.
- Nose: Subtle aromas of cherry blossom, intense notes of not overripe stone fruits: nectarine, apricot. With a little more temperature, intense aromas of pink grapefruit, cherry and an elegant mineral touch and notes of fresh balsamic herbs (sage and oregano) stand out.
- Mouth: Fresh, clean, and voluminous on entry, this wine is dry with excellent balance from its vibrant acidity. Bright red fruits, especially slightly underripe cherries, stand out on the palate. It has a long, persistent finish with subtle hints of fresh milk and lightly toasted macadamia nuts. The smooth, unctuous texture creates a rich, enveloping sensation.
Serving: Serve at 6–8ºC in medium-sized glasses with a wide body and slightly narrower rim. Ideal with seafood, especially grilled red shrimp and lobster, it also provides a fresh, aromatic contrast to spicy white meat and vegetable dishes.
Organic Wine-growing: Following organic farming principles, we avoid chemicals, preserving biodiversity and balance. Grapes are hand-harvested at night in September to maintain freshness and enhance Garnacha’s fruitiness. They reach the winery within 15 minutes for careful selection and processing.
Vintage: A mild, dry winter and an early, warm spring advanced sprouting by 10 days. Late May rains restored water reserves, ensuring good vine development. A hot, dry summer reduced yield by 25% but resulted in exceptionally healthy, high-quality grapes.
Note: Grenache, native to our region, thrives in our extreme, dry climate. At 780m altitude, it develops exceptional flavor while maintaining the freshness essential for high-quality rosé.
