The Vineyard
The Chardonnay grapes come from vineyards located at over 780 meters above sea level, with deep calcareous soils over porous “tufa” rock. This type of soil enhances aromatic concentration, acidity, and elegance—essential qualities for a great age-worthy cava.
Winemaking
Produced following the traditional method, with manual harvesting and careful grape selection. It undergoes a minimum ageing of 60 months in underground cellars and is crafted as a Brut Nature (“0 dosage”) to express the character of the estate-grown organic Chardonnay. Riddling, disgorging, labelling, and packing are all carried out manually.
Tasting Notes
Appearance: Bright golden yellow, with fine and steady bubbles forming a delicate crown.
Aroma: Floral notes (acacia, cherry blossom), stone fruit (apricot, nectarine), citrus (lemon, lime), fresh spring vegetation, along with hints of fresh butter, yeast, and toasted almonds.
Palate: Fresh, dry, and creamy. Excellent balance between acidity and fruit. Delicate bubbles, long on the palate, with an elegant persistence of citrus and buttery notes.
Serving & Pairing
Serving: Serve between 7–9 ºC in a medium-bodied glass.
Pairing: Perfect with white fish, oysters, clams, poultry, seafood stews, and roasted vegetables.
