Pago de Tharsys Rosado Cerámica Brut Nature Gran Reserva 2019 is an organic cava made exclusively from Garnacha grapes and aged for over 50 months on lees. With its elegant onion skin colour and fine bubbles, this rosé sparkling wine expresses great freshness, structure, and complexity. Each bottle is decorated with a handcrafted baked ceramic label, a tribute to the land and the artisanal tradition of the region.

Organic Garnacha vineyard in Requena
The grapes come from vineyards located at 780 metres above sea level, with deep calcareous soils and layers of clay and porous “Toba” rock. These conditions, together with organic viticulture practices, produce highly aromatic grapes with elevated acidity and excellent suitability for long-aged cavas. Harvesting is carried out manually and selectively.
Artisanal production and long ageing
The grapes undergo short maceration to extract the colour and typical aromas of Garnacha. The free-run juice is fermented at low temperature and then rests for over 50 months on lees. Riddling and disgorgement are performed manually, with no addition of expedition liqueur (Brut Nature “0 dosage”). Each bottle is boxed and labelled by hand with a baked ceramic plaque, crafted by Valencian artisans.
Tasting notes – Organic Rosé Gran Reserva Cava
Appearance: Bright onion skin colour. Fine, quick, and persistent bubbles.
Nose: Blue flowers, pink grapefruit, red apple, cherries, wild herbs, baked bread, fresh butter, mineral notes.
Palate: Dry, fresh, and structured. Creamy bubbles, red fruits (cherry, currant, red apple), warm bread, and butter. Long finish with balsamic and mineral notes.
Perfect pairing for this organic rosé cava
Perfect with beef or tuna tartare, intense seafood such as spider crab or sea urchin, sun-dried tomatoes in oil, aged sheep cheese, or cured tuna. Serve between 5°C and 7°C in a medium-bodied glass.
