Alegría de Tharsys is an organic sweet cava, made from high-altitude Chardonnay grapes and aged for more than 14 months on the lees. Organic vineyard in high-altitude Mediterranean climate
The vineyards are located at more than 700 meters above sea level, which favors optimal grape ripening while preserving its natural acidity. Calcareous soils with deep clay layers retain moisture during the driest months. Organic farming respects biodiversity and avoids herbicides and chemical products, resulting in a pure and expressive wine.
Artisanal winemaking and secret dosage
Harvesting is done by hand in 10 kg boxes. Grapes undergo manual selection and gentle pressing. The cava is made using the traditional method and ages for over 14 months on the lees. Riddling is manual and disgorgement is carried out in small batches. The 50 g/l dosage comes from a unique expedition liqueur, made with aged sweet wines from several vintages, giving it an exotic and exclusive profile.
Tasting notes of Alegría de Tharsys organic cava
Appearance: Old gold color with golden reflections. Fine, energetic, and persistent bubbles.
Nose: Apricot, custard apple, loquat, peach, and a hint of licorice.
Palate: Creamy, round, and very fresh. Sweetness perfectly balanced with lively acidity. Persistent and joyful on the palate.

Enjoy it your way: very cold, even with ice, paired with fresh fruit, yogurt, compotes, smoked salmon with avocado, eggs benedict, sweet pancakes, or desserts. It can also be mixed with natural juice and aromatic herbs. Perfect for sunsets, long after-meals, or spontaneous celebrations.
