The Vineyard
Predominantly calcareous soil with deep clay layers that help retain moisture.
Winemaking
Produced following the traditional method, with manual harvesting and grape selection. It undergoes a minimum ageing of 14 months in underground cellars and manual riddling before disgorgement. The dosage is 50 g/l, using a secret expedition liqueur made from old sweet wines of the winery.
Tasting Notes
Appearance: Old gold colour with bright golden highlights and fine, persistent bubbles.
Nose: An explosion of ripe fruit aromas with a subtle touch of liquorice and fine, persistent bubbles.
Palate: Creamy and persistent, with excellent balance between acidity and sweetness, and fine bubbles that bring freshness.
Serving & Pairing
Serving: Can be enjoyed very cold at 3ºC, even with ice.
Food Pairing: Ideal with fruit, yogurt, compotes, salmon with avocado or brunch, and also perfect mixed with natural peach or orange juice.
