Organic vineyard at altitude on calcareous soils
Located at more than 780 m above sea level in Requena, the vineyard has sedimentary calcareous soils with deep clay layers. These conditions allow for slow and balanced ripening, ideal for cavas with aging potential. Organic viticulture, free of herbicides and chemical products, respects biodiversity and guarantees the purity of the fruit.
Traditional winemaking with more than 24 months on the lees
Harvest is manual, in 10 kg boxes, followed by manual selection and gentle pressing. The second fermentation in bottle is carried out using the traditional method, and the cava rests on the lees for more than 24 months. Riddling is performed manually, as is disgorgement. The expedition liqueur includes family solera wines over 26 years old, adding depth and elegance.
Tasting notes of Millésime 2022 organic cava
Appearance: Pale gold with golden rim. Fine, delicate, and persistent bubbles.
Nose: White flowers, peach, apricot, grape, apple, grapefruit peel, mineral notes, and fresh cream.
Palate: Creamy, vibrant, and fresh. Marked minerality, ripe stone fruit, lively acidity, and a persistent, clean finish.
Ideal pairings for this Brut Reserva cava
Ideal with baked or grilled fish, seafood rice dishes, white meats with light sauces, and vegetables in tempura or grilled. Serve between 5–7 ºC in a tulip-shaped glass.
