Pago de Tharsys Argila 2021 – Organic Merlot Red Wine with Unique Character
Argila 2021 is a limited-production organic Merlot red wine crafted by Pago de Tharsys under the Protected Designation of Origin (DOP) Pago de Tharsys. This wine is born in Requena (Valencia), at over 780 metres above sea level, in a vineyard with clay soils and limestone bedrock — key factors that give the wine structure, freshness, and a distinctive varietal identity.

Organic Merlot Vineyard in Requena
The Merlot vines, planted in 1981, are the oldest on the estate. Thanks to their low yield, they produce small, highly concentrated grape clusters. This organic Merlot red wine is certified by the European Union. No herbicides or chemical pesticides are used, only environmentally friendly viticulture practices are applied.
Traditional Winemaking for Argila Organic Wine
The grapes are harvested by hand in 10 kg crates. After strict selection, the must ferments in stainless steel tanks and ages for 12 months in first and second-use French oak barrels. The wine is bottled unfiltered to preserve its complexity.
Tasting Notes
- Appearance: Intense, bright ruby colour with dense tears.
- Nose: Red and black fruits (blackberries, cherries), cocoa, roasted coffee, black pepper, lavender, thyme, and mineral clay notes.
- Palate: Broad, fresh, and structured. Balanced acidity, silky tannins, and a long finish with toasted and spicy notes.
Perfect Pairing for Argila Organic Merlot Red Wine
Pairs beautifully with red meats, game, traditional stews, legumes, and aged cheeses. Serve between 16 °C and 18 °C in a large bowl glass.
