The Vineyard
They cultivate the soils and vines according to organic farming principles, without using herbicides, chemical pesticides, or synthetic fertilizers. Instead, they use natural resources and organic composts to preserve the environmental balance and promote biodiversity in the vineyard.
Vintage 2025
The winter of 2025 was dry and cold, which helped sanitize the soil, while the very rainy spring created good water reserves and strong vegetative growth. The summer, dry with warm days and cool nights, favored healthy and well-balanced grapes; the Chardonnay was harvested in the third week of August, resulting in an excellent vintage.
Winemaking
The wine is made using the traditional method, fermented in French oak barrels (50% new oak), and aged on its lees for 6 months with daily bâtonnage.
Tasting Notes
Appearance: Pale lemon-yellow color, bright and clean, with fine tears that fall slowly.
Nose: Clean and intense aromas with notes of citrus and ripe stone fruit, complemented by subtle hints of butter, cream, and nutmeg contributed by the oak aging.
Palate: Well-balanced between ripeness and acidity, offering a fresh sensation with flavors of citrus and stone fruit, a smooth glyceric texture, and a long finish with a delicate custard-like note.
Serving & Food Pairing
Serving: Best served between 7ºC and 9ºC in a medium-sized wine glass.
Food Pairing: Ideal with oily and lightly smoked fish, roasted white meats, and pasta, rice, or legume dishes with vegetables, as well as Mediterranean tapas.
