Pago de Tharsys Argila 2021 – Vino Tinto Ecológico de Merlot
Pago de Tharsys Argila Merlot 2021 is a wine using traditional methods, monitoring the entire process from harvest through to bottling wine ready to drink and enjoy.
This wine is aged for 12 months in 1 and 2-use French oak barrels from different “tonneleries”. The wine is not filtered at all during bottling in order to conserve its structure and aromatic palate. That is why there may be some natural precipitate in it.
TASTING NOTES:
- Appearance: Bright and intense ruby colour. Medium tears that slide slowly through the glass.
- Nose: Subtle aromas of blackberries, cherries, and raspberries in the still glass. Upon swirling, notes of ripe red fruits, black pepper, cocoa, and roasted coffee emerge, along with balsamic hints of lavender, thyme, and clay.
- Mouth: Intense red and black fruit flavors (blackberries, plums, cherries) with a broad, persistent palate. Full-bodied, medium acidity for balance and freshness. Long finish with notes of roasted coffee, cocoa, and black pepper. Smooth, ripe tannins.
Service and harmonies: Served between 16ºC and 18ºC in a glass with a wide body and slightly closed mouth. It is an ideal wine to accompany long-maturing red meat dishes and game meats. It will also be a fantastic ally for traditional poultry, vegetable and legume stews.
Organic Vine-Growing: We follow organic farming standards, avoiding herbicides, chemical pesticides, and synthetic fertilizers. Using natural resources and organic fertilizers, we preserve biodiversity in the vineyard under our motto: “Observe and respect.” The Merlot vines, the oldest on our estate (planted in 1981), produce small bunches with low yields. Harvesting is done manually in 10 kg crates, reaching the winery within 15 minutes, where the best bunches are carefully selected.
Vintage: The 2021 vintage had a cold winter with abundant snow, sterilizing the soil and replenishing water reserves. A mild, rainy spring encouraged early growth, requiring careful canopy management. A hot summer accelerated ripening, and Merlot was harvested in late September. Lower yield but excellent quality and maturity—an outstanding vintage!
