PAGO DE THARSYS BRUT NATURE GRAN RESERVA MAGNUM
Pago de Tharsys Brut Nature Gran Reserva Magnum is crafted using the traditional method, starting with manual harvest in 10 kg crates and a careful grape selection. After gentle pressing and fermentation, the bottles rest for over 40 months on lees in underground cellars. A month before disgorging—done entirely by hand—the bottles are moved to riddling racks for manual turning. As a Brut Nature “0 Dosage” cuvée, no expedition liqueur is added, allowing the organic estate-grown Chardonnay to fully express its character. Each bottle is labeled and boxed by hand, featuring a baked clay label made by local ceramic artisans—a tribute to the region’s soil and cultural heritage.
TASTING NOTES:
- Appearance: Bright golden yellow colour, fine and homogeneous bubbles that are slowly released to make a very fine, delicate and persistent crown.
- Nose: Delicate aroma of blossoming tree: acacia, cherry tree, fresh stone fruit: apricot and nectarine, and citrus: lemon and lime peel: Fresh notes of spring vegetation and wet stone, as well as aromas of fresh butter, bark of bread and lightly toasted almonds.
- Mouth: Fresh and clean attack, dry and with a fantastic acidity in balance with the flavours of ripe stone fruit and green apple. Delicate and soft bubbles result of the long aging in the bottle with its lees before disgorging that provide a pleasant volume and creaminess on the palate. Long persistence throughout the palate, especially the citrus and buttery notes.
Serving: Serve between 7ºC and 9ºC in medium-sized glasses with a wide body, slightly narrower at the top. Pour slowly down the side of the glass to avoid breaking the bubbles. It will be the perfect companion for dishes of white fish, oysters and clams, poultry, seafood stews, and baked vegetable dishes. Exquisite if accompanied with sea views.
Vintage: The 2018 vintage benefited from good water reserves and a cooler, rainier summer, leading to later ripening and excellent grape quality. Harvested on September 10, the Chardonnay preserved remarkable natural acidity thanks to low temperatures, making this one of the freshest and potentially most age-worthy vintages of the last 12 years.
