The Vineyard
The vineyards are located at over 700 meters above sea level, with a continental climate strongly influenced by the Mediterranean, resulting in significant temperature variation between day and night. This contrast allows for the production of ripe grapes with naturally high acidity, ideal for long ageing.
The soils are calcareous, with deep clay layers and a large limestone bedrock starting at around 2 meters depth. This structure retains moisture and produces small, highly aromatic grapes of outstanding quality.
Winemaking
The harvest is carried out manually in 10 kg crates, and the grapes are sorted on a selection table before gentle pressing. After tirage, the cava rests in our underground cellars for more than 38 months in a horizontal position.
Riddling is then performed manually on traditional racks, followed by manual disgorgement.
This organic cuvée, bottled in Magnum format, contains no dosage: it is a Brut Nature (0 dosage), designed to express the purity and elegance achieved through extended ageing on lees.
Tasting Notes
Appearance: Bright old gold color. Extra-fine, very homogeneous and persistent bubbles, forming an elegant and delicate crown.
Aroma: Notes of sun-ripened peach, Golden apple, lemon peel, toasted hazelnuts, butter, freshly baked bread, pastry cream, and vanilla.
Palate: Round, full, and creamy entry. Extremely fine bubbles provide volume and smoothness. Great freshness, balance, and a very long finish.
Serving & Pairing
Serving: Serve between 7 and 9 ºC in a medium-sized glass.
Pairing: Perfect for special celebrations and sharing at the table. Its complexity and versatility make it an ideal companion for a full tasting menu.
