The Vineyard
This variety is grown on a plot with predominantly calcareous soil of ancient origin, formed by sediments of aquatic microorganisms. A nutrient-poor terrain with good water retention at depth, ideal for this unique seedless white variety, which produces intensely aromatic grapes.
Albariño Variety
The Albariño variety requires a higher trellis system due to its high sensitivity to fungal diseases. Good aeration is essential, creating a cool and particularly pleasant vineyard during the summer.
Winemaking
Hand-harvested in 10 kg crates, followed by a light sun-drying process to concentrate sugars. Natural fermentation is stopped by cooling, with no oak aging in order to preserve its floral and fruity aromas.
Tasting Notes
Appearance: Bright old gold color with orange reflections.
Nose: Intense aromas of ripe exotic fruits such as passion fruit and mango, with delicate notes of yellow flowers and a subtle hint of pollen.
Palate: Creamy and intense entry, with a great balance between acidity and sweetness. Fresh, persistent, and enveloping, with a smooth texture and a perfumed finish.
Serving & Food Pairing
Serving: Best served between 6ºC and 8ºC in a medium-sized glass.
Food Pairing: Ideal with creamy cheeses, foie gras, and terrines, as well as desserts made with yellow fruits, custards, and traditional sweets.
