PAGO DE THARSYS | CABERNET FRANC WITHOUT SULPHITES 2023
The Vineyard
The Cabernet Franc comes from the Albar plot, planted in 1986 next to the winery, in the southern part of the estate. Its predominantly calcareous, white-colored soil lies over an ancient “tufa” rock, formed millions of years ago from calcareous sediments of subterranean origin.
Vintage 2023
A year with a mild, dry winter, early bud break, and strong vegetative growth thanks to the June rains. Dry conditions in August and September ensured excellent grape health. Harvested on October 3rd, the vintage stood out for its high quality and low yield.
Winemaking
A warm vintage with cool nights that favored slow ripening. The wine shows aromas of black fruit, licorice, and undergrowth. On the palate, it is intense, with defined tannins and a lively, persistent finish.
Tasting Notes
Appearance: Deep ruby color with a pronounced intensity and purple rim.
Nose: Intense aromas of ripe black and red fruits, with floral notes and a mineral touch; when swirled, hints of licorice emerge.
Palate: Clean, dry entry with balanced acidity that provides freshness. Intense ripe black fruit, full-bodied structure, pleasant tannins, and a long-lasting finish.
Serving & Food Pairing
Serving: Best served between 14ºC and 16ºC in a medium-sized glass.
Food Pairing: Ideal with rich red meats and slow-cooked traditional stews, as well as dishes with concentrated, powerful sauces.
