Tharsys Único Reserva 2019 – Organic Cava 100% Garnacha Tinta
Tharsys Único Brut Reserva 2019 is an organic cava made exclusively from Garnacha Tinta grapes, gently pressed with no skin contact to obtain a white sparkling wine with all the structure of a red grape. This signature cava combines artisanal tradition, organic viticulture, and over 36 months of lees ageing. Its handcrafted baked ceramic label is a tribute to the land and Valencian artistry.

Organic vineyard on limestone soils in Requena
The grapes come from vineyards located over 780 meters above sea level, planted on limestone soils with deep layers of clay and porous “Toba” rock. These low-fertility but moisture-retentive soils enhance aromatic concentration and natural acidity, key for long-aged cavas. The Garnacha Tinta is cultivated according to organic farming principles, free from chemical products, respecting the biodiversity of the environment.
Artisanal production and lees ageing
After manual harvesting and careful selection, the grapes are gently pressed with no skin contact. The base wine is bottled for a second fermentation and aged on lees for over 36 months. Riddling and disgorgement are performed by hand. The final dosage includes liqueur d’expédition from our family solera, over 26 years old, adding depth and uniqueness. Each bottle is labelled by hand with a fired ceramic plaque crafted by Valencian artisans.
Tasting notes – Tharsys Único 2019 Organic Cava
Appearance: Pale straw yellow, with fine, energetic, and persistent bubbles.
Nose: Stone fruit (peach, apricot), fresh figs, lavender, yeast, toasted almonds, and liquorice.
Palate: Fresh and clean entry. Great structure, crisp bubbles, creamy texture, and long persistence. The finish is marked by fruit, butter, and nuts.
Perfect pairing for this Garnacha cava
Perfect with roasted or grilled red meats, rice dishes, mushroom stews, or game dishes. Serve between 5°C and 7°C in a medium-bodied glass.
