Tharsys Único Reserva 2019
Tharsys Único Reserva 2019 is an organic Reserva cava crafted in calcareous soils at 780 meters above sea level, in a continental Mediterranean climate. This cava is made using the traditional method and aged for 36 months in underground cellars. With a dosage of 6 grams per liter and an expedition liqueur from our 26-year-old family solera, this cava stands out for its elegance and character. Labeling and boxing are done by hand, using a fired clay label as a tribute to our region.
TASTING NOTES:
- Appearance: Pale straw yellow color with a bright rim and fine, energetic, and persistent bubbles.
- Nose: Intense aromas of peach, apricot, fresh figs, and lavender, with hints of dairy, fresh yeast, toasted almonds, and licorice root.
- Palate: Fresh and clean entry, with great structure and volume. Crisp bubbles that dissolve easily, leaving a creamy sensation and long persistence, highlighting flavors of grape, green figs, fresh butter, and toasted nuts.
Serving and Pairing: Serve between 5°C and 7°C in a medium-sized glass with a wide bowl and slightly closed rim. Pour gently down the side of the glass to preserve the bubbles. Pairs beautifully with roasted or grilled red meats, rice dishes, and flavorful stews with game and wild mushrooms.
Organic Viticulture: We practice organic viticulture, avoiding herbicides and chemical pesticides, and using organic fertilizers and natural resources that preserve environmental balance and promote biodiversity in the vineyard.
Vintage:The 2019 vintage was shaped by a series of climatic challenges. It began with good water reserves from winter rains, but a colder-than-usual spring delayed bud break until late May. The summer brought intense heat along with storms and hail, which reduced the potential yield by around 10%. As the harvest approached, a week of heavy rain caused waterlogging in the vineyards. Despite these difficulties, ongoing vineyard care and precise management allowed for the collection of healthy, high-quality grapes—though in limited quantity.
