Pago de Tharsys Diana García 2021 Bobal red wine is an expertly crafted wine that perfectly blends tradition and expertise. Under the guidance of renowned winemaker Diana García Berrouet, this exceptional Bobal red wine undergoes cold maceration, gentle manual pumping, and 12 months of aging in French oak barrels. Bottled without filtration to preserve its structure and complexity, it may develop natural sediment, a mark of its authenticity and artisanal quality.
Tasting Notes:
- Appearance: A deep red-ruby hue with fine, slow-moving tears in the glass.
- Nose: Intense aromas of red rose, wild berries, and ripe raspberry, with hints of fresh cream. Swirling reveals elegant notes of white pepper, nutmeg, and lightly roasted coffee.
- Mouth: Intense red fruit flavors of wild blackberries, raspberries, and plums, with a toffee and roasted coffee aftertaste. Balanced structure, vibrant acidity, and smooth, well-integrated tannins for a fresh, persistent finish.
Serving: Serve at 16–18ºC in a medium-sized glass with a wide body. Perfect with grilled or roasted red meats, meat stews, and rich autumn/winter dishes featuring wild boletus, game, foie, black truffles, and intense sauces.
Organic Wine-growing: We follow organic farming practices, avoiding herbicides, chemical pesticides, and synthetic fertilizers. Using natural resources and organic fertilizers, we preserve biodiversity and maintain balance in the vineyard. Our motto: Observe and Respect. Harvesting is done manually in 10 kg crates, with the best bunches carefully selected before processing.
Vintage: A wet autumn and winter, with heavy snowfall on January 7, replenished subsoil water and eliminated parasites due to extreme cold. A mild, rainy spring encouraged early bud break and strong growth, requiring careful canopy management. A brief summer heatwave accelerated ripening, resulting in a lower-yield but high-quality vintage with excellent maturity.
Note: Renowned winemaker Diana García Berrouet, with vast experience in Pomerol (Bordeaux), has played a key role in crafting this wine. A member of the founding family of Pago de Tharsys, her vision was essential in creating this elegant, fresh, and fruity Bobal wine, native to the region.
